Unlike a recipe for gluten-free blueberry muffins I failed at recently (muffins should not have the texture of a meatball), Keeley McGuire’s recipe for chunky apple-pumpkin muffins uses Pacific Foods’ pumpkin puree and apples to keep the batter moist and springy. You’ll have a hard time making sure the whole dozen make it to the oven for baking! The recipe is gluten-free and also free of the top eight allergens (gluten, milk, dairy, soy, peanuts, tree nuts, wheat, eggs).
