Easy Taco Dinner

My first blog on ParentMap.com - I have deemed myself the new PM quick and easy meal creator.  I hope to share, from time to time, easy to make tried/true recipes - and that require very few ingredients.  Feel free to tell me what you think of a recipe or add your own variations in the comments.  Together... we will reclaim the dinner hour.  

 

Toddy’s “fool proof” slow cooker chicken tacos

1 package of taco seasoning

3-4 chicken breasts

1 28oz can of crushed tomatoes

1 can black beans – drained

1 red pepper (optional) – cut thin- so kids don’t know it’s in there

1 can green chilies (optional)

Put all ingredients above in your crock pot and give it a good stir.  Cook on low 6-7 hours or on high for 3-4 hours.  Remove chicken and use 2 forks to shred the chicken breasts into small pieces. and remove skin/bones if not boneless.  Put shredded chicken back in the crock pot.  Serve mixture in warm flour tortillas with a sprinkle of cheddar cheese.  

 

Or get fancy and put small bowls on the counter with sour cream, avocado, cheese, salsa, and other favorite fixings - and let each person “make their own” taco using the chicken as the beginning.
